I used a new type of file powder in gumbo that I have made many times. It came out too thick and slimey. I can thin it down with some chicken stock. How can I fix the slimey texture. It is very unappealing.

Okra produces slime because the Okra plant and its fruit contain nasty stuff called mucilage. When you apply heat to the Gumbo, the slime comes out. But there are a few techniques for reducing all that sliminess, namely pan frying or grilling prior to adding it to the Gumbo.

No one addressed the persons question. Once IT slimy, how can you rescue it? In other words once cooked do I throw it out ir how do I fix it? Yes before adding okra use some frying oil and flour.. not much, you dont want fried okra and you need some slime to thickin the gunbo, especially if you used a dark roux the darker adds more flavor but does not thicken as well. I dont know a good way, as we speak I have a large expensive pot of gumbo I failed to reduce the slime enough. I will try adding lemon or lime and some blonde roux, in hopes that it will help, but I doubt it.
