Most of the hominy cooking techniques I have seen follow the same pattern: soak overnight, boil for 10 minutes, simmer for 2 - 4 hours. I don't feel comfortable leaving it on the stove for 2 - 4 hours, I feel it's safer to use the oven or a slow cooker. I prefer the oven because I can control the temperature better, and my stainless steel pot is easier to wash than the thick, heavy ceramic inset from the slow cooker.
Is there anything to say either one is better? Is a slow cooker much more energy efficient than an oven? (BTW, oven is brand new)
